Description:

Used to mechanically inject a curing solution (brine, which can include salt, starch, soy protein, and other seasonings) into pieces of meat or seafood. Its primary purposes are to:

  • Enhance Flavor and Tenderness: The injected solution helps to season the product internally and break down its fibers, resulting in a more tender and flavorful final product.

  • Improve Yield: By retaining the curing solution, the product’s weight and moisture content are increased, which improves the final output rate.

The machine works by using a pump to push the brine through a set of needles that pierce the product as it is conveyed through the machine. Key settings like injection pressure, step speed, and needle frequency can often be adjusted to achieve the desired level of injection, known as the injection rate
